“Crafting Success in Yogurt Production & Launching Business”

Sanjok Biswa holds an MBA from the University of Canberra and a bachelor’s degree (Hons) in microbiology from India. He founded Serkar Dairy Plant and serves as its chief operating officer (COO). He has over ten years of experience in the manufacturing sector and over six years in the dairy industry. In order to launch his own dairy-related company, he left his position as Senior Operations Manager at Koufuku International Limited (KIL).

With his six years of extensive experience working for one of the most well-known dairy companies in the country, Sanjok has knowledge of the whole functioning of the processed dairy value chain. He is a passionate dairy industry enthusiast who aspires to build Thimphu’s first cutting-edge dairy factory. He is a dedicated and accomplished professional, bringing a wealth of dairy processing experience, a food safety management system, and a dedication to both quality and innovation.

Motivated by a desire to contribute to the development of the local economy and promote self-sufficiency in dairy production, “I am eager to establish the first state-of-theart dairy plant in Thimphu. With a proven track record in successfully managing dairy ventures, I am confident in my ability to bring innovation, efficiency, and quality to the Bhutanese dairy industry. I am excited about the opportunity to work closely with local stakeholders, farmers, and government agencies to create a sustainable and thriving dairy ecosystem in western community,” Sanjok shared.

Greek yogurt has gained immense popularity in recent years due to its rich and creamy texture, as well as its higher protein content compared to regular yogurt. “Consumer demand for Greek yogurt has driven many dairy companies to include it in their product offerings to meet market preferences,” he said. Further, Greek yogurt is known for being a good source of protein, probiotics, and essential nutrients. As health-conscious consumers seek out nutritious options, dairy companies produce Greek yogurt as a way to provide a product with perceived health benefits.

Sanjok said, “Greek yogurt allows dairy companies to differentiate themselves in a competitive market. The unique texture and nutritional profile of Greek yogurt provide a distinct product that can attract a specific segment of consumers. It’s thick and creamy texture makes it versatile in both sweet and savory culinary applications. It can be used in cooking, baking, and as a base for various dips and sauces. This versatility makes it appealing to consumers and widens its usage in both home kitchens and foodservice.”

Greek yogurt is often positioned as a premium or upscale product due to its thickness and quality. Dairy companies may choose to produce Greek yogurt to target a market segment that is willing to pay a premium for a higher-quality, more indulgent yogurt experience. “Greek yogurt has roots in Mediterranean and Middle Eastern cultures, and its popularity has spread globally. As consumers become more interested in diverse and global cuisines, dairy companies may produce Greek yogurt to tap into this cultural trend” he shared. These Greek yogurt is lower in lactose than traditional yogurt due to the straining process, making it a more digestible option for individuals with lactose sensitivity.

He mentioned that they have many additional plans for the future. One of them is to make block cheese, which has more benefits than products imported from other nations. Because processed cheese is more stable and has a longer shelf life than natural cheese, it is convenient and possesses both of these qualities. Because it doesn’t need to be refrigerated until it’s opened, it’s handy for consumers and can be distributed in a variety of markets, including ones with weaker cold storage infrastructure. Additionally, the consistency and smooth texture of these cheeses make them ideal for a variety of culinary uses.

It’s a popular option for sandwiches, burgers, dips, sauces, and ready-to-eat meals because it melts evenly and smoothly. Because of its adaptability, processed cheese is a useful component for chefs and food makers. “Making processed cheese with resources that are readily available locally not only reduces trade deficits but also fosters economic growth, job creation, and the dairy industry’s overall sustainability,” he express. It supports more general objectives of fostering self-sufficiency and bolstering the local economy’s resilience. Domestic production of processed cheese helps to close the trade deficit by lowering dependency on imported goods.

It helps retain capital within the country, as money that would otherwise be spent on importing cheese is circulated within the local economy. Governments often support initiatives that promote domestic production and reduce trade deficits. Seek potential incentives, subsidies, or support programs that could aid in the development of a local processed cheese industry.

Developing the capability to produce processed cheese locally enhances the country’s self-sufficiency in meeting its dairy product needs. Reduced dependency on foreign suppliers makes the country more resilient to external market fluctuations and potential supply chain disruptions. “The production of processed cheese allows for the creation of various flavors, textures, and forms. Companies can introduce different varieties, such as spreadable cheese, slices, or blocks with added herbs, spices, or other ingredients to meet specific consumer demands,” he said.

“Dairy producers can differentiate their products in a competitive market and meet consumer preferences for texture, nutrition, and versatility by producing Greek yoghurt,” Sanjok presume. On the other hand, processed cheese production satisfies consumer demands for uniformity, flexibility, and ease of use. In terms of cost-effective production, expanded market reach, and suitability for a range of culinary uses, it also provides dairy enterprises with practical advantages.

In conclusion, the yogurt producer like SERKHA DAIRY’S commitment to quality, innovative flavors and health conscious options positions it as a competitive player in the market. With a focus on customer satisfaction and a dedication to meeting evolving consumer preferences, the company is well-positioned for sustained success in the dynamic yogurt industry.
